I had the pleasure of visiting Sauvage not once but twice on my winter holiday in Alberta. Both nights we dined on tasting menus including the NYE Alice in Wonderland themed menu. Upon entering the restaurant you can immediately tell there is a lot of intention, thought and heart that goes into both the establishment and the cuisine. Chef Tracy's creations are thought provoking, fresh and imaginative. Her background in foraging and concepts of what wild and earthy sustainable food should be comes across perfectly in her dishes and she has a way of charming you into eating things you never thought you would eat with both her excitement and enthusiasm. Each night was a beautiful and pacifying experience and we felt well taken care of by the wonderful staff. I left with both a full heart and an inspired mind. looking forward to my next visit. A definite must dine here if you're in the area!

Incredible date night spot. We had the chef tasting menu and we left stuffed and SO satisfied. A 7 course meal with so many interesting, unique and amazing flavours. Every dish was a treat.

Highlights were the mushroom gnocchi and the buffalo. Our server John absolutely NAILED the dishes, recommendations & pairings. It felt like a dinner party served by friends and family. It’s such an intimate spot. Can’t wait to make it back to Canmore to eat here again!

Wow just wow! Came here for my 30th and picked this place months ago based off the website, decor, and overall just seemed like a great place. I was overly impressed by the staff, ambience and food!! Now I’m a fast eater… and this place had me there for a couple hours for the delicious 7 courses. Which for me, forces me to take in the experience of food and wine. I 100 percent would recommend this place to anyone. Plus at the end they even gave me a beautiful hand signed birthday card. Yes yes and yes. Amazing!

Juice pairing .. does not adequately describe the delicious combination of flavors the chef developed for each different plate. She has developed a fun, delicious and unique Prix Fixe Menu.

Go and enjoy . We highly recommend and would go again of ever in Canmoor again.

FOOD can be ART!

I’ve been there two times with a gap of 6-months so far( and I will be many more times in the future !!). Both tastings menus were different and were very interesting!
This place offers you a taste of 5 star meal with an artistic visual presentation!
Their glorious way of preparing and presenting food in absolutely creative and unique. They have a great selection of local ingredients. ( check out their website for the menu and to find out more about the ingredients, it is impressive! ). In our Second visit we did Hunter X.

Also their Staff are knowledgeable about all the ingredients and service is FANTASTIC!
Honestly, I am in love with this place and I just can’t recommend it enough!
Second time I was there I told them that I want to meet the chef to Thank them myself! 😊

One of my favourite fine dining spots in Canada. Unique, locally foraged ingredients, seasonal, and wildly delicious. Don't mess around, get the ten course menu, wine pair (or juice pair) and have a ceaser to start. Sauvage is a statement of what Canadian fine cuisine can be, and I love it.

STUNNING. Celebrated my 30th birthday here and had a meal I will never forgot. Every course was unique and absolutely delicious. We had a large party (11 people) of which two were vegetarian. Their “gatherer” meals were esthetically matched to the “hunter” meals, and just as filling. The wine pairings were well thought out and perfectly complemented the dishes. One member of our party had the juice pairing. She really appreciated that the juice was thoughtfully chosen to compliment each dish. Our servers were very knowledgeable and funny! They handled our big group with ease, even after a few glasses of wine! Highly recommend this restaurant!

Amazing food, we did the chef’s tasting menu, and added the venison tartar. By far the best meal we had in Canmore.

The service was top notch, the entire team was welcoming and had beautiful explanations of the food and the the restaurant concept.

Highly recommended.
